Ingredients
- 1 handful mint
- 2 tbsp white wine vinegar
- 100 ml sunflower oil
- 1 tsp Honey
- lime juice
- 0.5 tsp grated lime zest
- Salt
- 500 g shrimp (pre-cooked, deveined, peeled except for tail segment)
- 4 tbsp olive oil
- 2 tbsp Lime juice
- white pepper
- 1 clove garlic

Wash the mint, shake dry and pinch the leaves. Blend with vinegar in a blender, gradually adding oil. Stir in honey and season with lime juice, zest, and salt.

Wash the shrimp, pat dry and skewer on wooden sticks. Whisk 2 tbsp olive oil, lime juice, white pepper, and minced garlic into a marinade. Brush shrimp with it. Quickly sear in hot oil for 2 minutes each side. Serve with the lime-mint sauce.
