Shrimp Skewers and Mulled Wine

Ingredients
- 1 l light red wine
- 100 ml port wine
- 1 untreated orange (zest)
- 4 cloves
- 1 cinnamon stick
- 1 tsp cardamom pods
- 1 star anise
- 1 piece fresh ginger (about 1.5 cm peeled and sliced)
- 300 g flour
- 2 Eggs
- 1 egg yolk
- Salt
- 16 scampi (peeled and deveined)
- 4 spiced orange slices (with cloves and star anise)

Heat the red wine together with the port wine, orange zest, spices and ginger in a pot until just before boiling. Do not boil; let it steep for 10-15 minutes.

Meanwhile, for the dough mix 200 g flour with the eggs, egg yolk, about 350 ml cold water and a pinch of salt into a smooth batter and let it rest for about 15 minutes. Preheat the deep fryer to 180°C. Wash the scampi, pat dry, coat in remaining flour, tap off excess and then dip each one sequentially through the batter.

Fry in hot oil until golden brown, remove with a slotted spoon and drain. Arrange on wooden skewers. Strain the mulled wine into four glasses and serve garnished with a spiced orange slice per glass.
