Semolina Porridge with Oat Milk

The semolina porridge with oat milk from Spoonsparrow is vegan, creamy and ideal for an energetic start to the day.

Ingredients

  • 450 ml oat drink (oat milk)
  • 2 Tbsp cashew nuts (10 g each)
  • 2 Tbsp cranberries (10 g each)
  • 100 g spelt semolina
  • ½ tsp cinnamon
  • ¼ tsp cardamom powder
  • 1 apple
  • 1 tbsp Maple Syrup
  • 1 tsp vanilla powder

Instructions

    Warm the oat drink in a pot over medium heat for about 5 minutes. While it heats, roughly chop the cashew nuts. Add cranberries, semolina, cinnamon and cardamom to the oat drink and stir until smooth. Reduce heat and let thicken for 1–2 minutes while stirring. Remove from heat and set aside.

    Peel, wash, core, and dice the apple. In a pan with maple syrup, 50 ml water and vanilla, sauté over medium heat for about 2–3 minutes.

    Divide the finished semolina porridge into two bowls and serve with apple compote.
