Seafood with Rice Noodles

Ingredients
- 300 g pre‑cooked mixed fish fillet, skinless (e.g., salmon, cod)
- 300 g pre‑cooked seafood (e.g., shrimp, squid rings, mussels)
- 6 tomatoes
- 1 Shallot
- 1 Garlic clove
- 400 g orzo pasta
- Salt
- 2 tbsp olive oil
- 150 ml dry white wine
- pepper (ground)
- 1 untreated lemon (cut into wedges)
- 1.5 tbsp freshly chopped dill
Instructions

Wash the fish, pat dry and cut into bite‑size pieces. Wash and pat dry the seafood as well.

Blanch the tomatoes, cool, peel, quarter, seed and dice them. Peel and finely chop the shallot and garlic.

Cook the pasta in boiling salted water until al dente.

Heat oil in a non‑stick pan and sauté the shallot with garlic until translucent. Add fish and seafood, cook for 2–3 minutes while stirring occasionally, then add tomatoes. Deglaze with wine, season with salt and pepper, and simmer on medium heat for about 5 minutes. Drain the pasta, let it dry slightly, then add to the pan, toss everything together and serve on plates. Garnish with lemon wedges and sprinkle dill.
