Ingredients

  • 1 sea bream (about 1–1.2 kg, ready to cook)
  • 500 g Potatoes
  • 2 tbsp finely chopped parsley
  • 50 g freshly grated Parmesan
  • 3 Garlic cloves
  • 10 tbsp olive oil
  • Salt
  • freshly ground pepper

Instructions

    Peel the potatoes, slice them and blanch in boiling salted water for about 5 minutes; drain and set aside.

    Mix the parsley with about 8 tbsp of oil.

  3. 3.

    Place half of the potato slices in a baking dish coated with the remaining oil, season with salt and pepper, drizzle with some of the parsley‑oil mixture, and sprinkle with half of the cheese.

    Lay the fish on top of the potato slices, season with salt and pepper, drizzle with more parsley‑oil; arrange the remaining potato slices over it, season again, drizzle with the rest of the oil, and scatter the remaining cheese on top.

    Bake in a preheated oven at 220°C for about 25 minutes.
