Scottish-Style Oatmeal Soup

Ingredients

  • 450 g lamb meat (e.g., neck)
  • 2 Bay leaves
  • 1 l beef broth
  • 2 parsley roots
  • 2 carrots
  • 2 onions
  • 2 stalks celery
  • 50 g oatmeal
  • 1 tbsp chopped parsley
  • Salt
  • ground pepper

Instructions

    Wash and pat the meat dry, then set it in cold broth with bay leaves and bring to a boil. Simmer for about 45 minutes, skimming foam as needed.

    While the broth simmers, peel or wash and trim the vegetables, then dice them. Add the diced veggies and oatmeal to the pot and let simmer gently for about an hour, stirring occasionally and adding water if necessary. Remove the meat from the broth, cube it, and return it to the pot. Discard the bay leaves, add parsley, season with salt and pepper, and serve.
