Schupfnudeln on Super-Tomato Sauerkraut in the Thermomix

Ingredients
- 20 g Parmesan
- 1 onion
- 500 g Sauerkraut
- 1 tbsp Tomato Paste
- 1 g herb mix (Herbes de Provence)
- 200 g Cherry tomatoes
- 500 g schupfnudel
- 5 g thyme
- 2 Spring Onions
- Salt
- Pepper
- butter
Instructions

Add parmesan to the mixing bowl, chop for 10 seconds on speed 10 and transfer to a small bowl.

Add onion to the mixing bowl, chop for 5 seconds on speed 5. Use the spatula to push down, add 1 tbsp butter and sauté for 3 minutes at 120°C on speed 1. Add sauerkraut and steam for another 5 minutes at 120°C on speed 1.

Add tomato paste, herb mix, cherry tomato halves, a pinch of salt and pepper, and about 100 ml hot water to the sauerkraut in the mixing bowl and cook for another 5 minutes at 100°C on speed 1. Meanwhile, heat 1 tsp butter in a small pan, fry schupfnudeln for about 5 minutes until golden brown.

Distribute tomato-sauerkraut onto plates, arrange schupfnudeln on top, sprinkle with thyme, spring onions and parmesan and enjoy.
