Ingredients

  • 120 g dark chocolate
  • 50 g butter
  • 50 g flour
  • 300 ml milk
  • 50 g sugar
  • 3 egg yolks
  • 4 egg whites
  • powdered sugar (for the cups)
  • butter (for the cups)
  • 6 soufflé cups
  • powdered sugar

Instructions

    Grate the chocolate finely. Melt butter in a pot, stir in flour and cook until lightly browned. Deglaze with milk, stirring and bring to a boil. Stir in chocolate and 2/3 of the sugar, then remove from heat. Beat egg yolks and fold into the chocolate mixture. Whip egg whites very stiff, folding in the remaining sugar. Fold 3 tablespoons of the meringue into the chocolate mixture, then gently fold in the rest.

    Fill the buttered and sugared cups with the batter and bake at 175°C for about 25-30 minutes.

    Before serving place a small paper heart on each soufflé, dust with powdered sugar, then remove the paper heart.
