Schnapper in Wine Dough with Radish Raw Salad

Ingredients
- 8 Schnapper fillets
- 2 EL lemon juice
- Salt
- Pepper
- 250 ml white wine
- 200 g Flour
- 1 pinch salt
- 2 Eggs
- 2 TL oil
- 2 bunches radishes
- 3 pickled cucumbers
- 4 EL Mayonnaise
- 200 g Sour Cream
- Salt
- Pepper
- 4 lemon slices
- 4 leaves lettuce
- oil (for frying)

Drizzle the schnapper fillets with lemon juice, season with salt and pepper, let rest.

For the salad, peel the radishes and dice them. Dice the pickled cucumbers as well. Combine everything with the remaining salad ingredients, season with salt and pepper.

Separate the eggs; beat the egg whites with salt into stiff peaks. Mix the remaining dough ingredients into a smooth batter and fold in the meringue.

Heat the frying fat in a pot (it is hot enough when bubbles start to rise on a wooden spoon handle held in the fat).

Pat the fish fillets dry, coat them in the dough, fry until they float, drain on paper towels, and keep warm in a preheated oven at 140°C.
