Ingredients
- 1 onion
- 150 g Serrano ham (thinly sliced)
- 3 tbsp olive oil
- 1 tbsp finely chopped parsley
- 100 g flour
- 300 ml milk
- Salt
- ground pepper
- freshly grated nutmeg
- 2 tbsp dry sherry
- 2 Eggs (size M)
- 150 g toast bread
- flour
- oil (for frying)
- radicchio (or frisée for serving)

Peel and finely dice the onion. Cut the ham into small pieces. Heat oil in a shallow pan. Sauté the onion. Add the ham and parsley, cook 2-3 minutes. Stir in flour, gradually pour in milk while whisking with a wooden spoon until the mixture lifts from the pan and forms a white layer.

Remove the pan from heat. Season the mixture with salt, nutmeg, pepper, and sherry, then transfer to a shallow dish. Cover with cling film and let cool. Crush the toast bread finely in a food processor.
