- 0.5 cantaloupe melon
- 0.5 shallot
- 0.5 Red chili pepper
- 3 stalks of coriander leaves
- 1 Lime (juice)
- 1 pinch sugar
- Salt

- 4 Large shrimp (deveined, with shell and no head)

Peel the mango, cut the flesh from the pit and dice it. Cut half a melon into wedges, scoop out the flesh and dice it. Peel the shallot and finely chop it. Rinse the chili pepper, remove the seeds and finely chop it. Wash the coriander leaves, shake them dry and set aside a few for garnish; finely chop the rest. Combine the mango, melon, shallot, chili, and chopped coriander in a bowl. Season with lime juice, sugar, salt, and pepper, tasting as you go. Spread the salad onto plates.

Wash the shrimp, pat them dry, and grill them on a hot grill for 2–3 minutes per side. Arrange the grilled scampi over the fruit salad and serve immediately.
