Ingredients
- 8 scallops
- 1 Vanilla bean
- 1 tbsp oil
- 1 tbsp butter
- a pinch of salt
- a pinch of pepper
- 2 tbsp hot mango chutney
- 1 tbsp sweet‑and‑sour sauce
- 2 tsp light balsamic vinegar
- 2 limes
- some mint leaves (for serving)
Instructions

Pat scallops dry. Split vanilla bean lengthwise, then cut into about 8 cm long strips. Thread one vanilla strip through each scallop.

Heat oil and butter in a non‑stick pan. Sear scallops on both sides for a total of 3–4 minutes. Remove from heat and let them finish cooking in the pan for another 2–3 minutes. Season with salt and pepper. Take scallops out of the pan.

Add chutney, sweet‑and‑sour sauce, and vinegar to the pan and warm briefly while stirring.

Slice limes into wedges. Plate scallops with the sauce, lime wedges, and mint leaves as garnish.
