Savory Stuffed Crepes

Ingredients
- 125 g flour
- 3 eggs
- 1 tsp salt
- a pinch of sugar
- 2 tbsp olive oil
- 250 ml Water
- butter
- 10 tomatoes
- 3 tbsp chopped basil
- olive oil
- 2 Garlic cloves
- 1 tsp sugar
- freshly grated nutmeg
- a pinch cayenne pepper
- Salt
- Pepper
Instructions

Mix flour, eggs, salt, sugar, oil and water and let the batter rest for 30 minutes.

Wash, blanch, peel, halve, core and chop tomatoes. Peel and finely chop garlic. Heat 1 tbsp oil in a pan and sauté garlic until translucent. Add tomatoes and cover; simmer for 5 minutes over medium heat. Season with salt, sugar, pepper, cayenne pepper and nutmeg.

Heat a little butter in a non-stick pan over medium heat. When pouring the batter, tilt the pan to spread it evenly thinly. Flip the crepes with a spatula and bake until golden brown. Set finished crepes warm.

Place tomatoes in the center of each crepe, sprinkle with basil, fold the crepes slightly from two sides and serve warm sprinkled with herbs.
