Savory Scones with Tomatoes and Cheese

Ingredients
- 1 small red onion
- 1 tsp plant oil
- 2 dried tomatoes (pickled in oil)
- 250 g flour
- 2 tsp Baking powder
- 80 g grated cheese (e.g., cheddar)
- 0.5 tsp Salt
- 0.5 tsp ground poppy seeds
- 50 g soft butter
- 175 g yogurt
- flour (for dusting)
- 1 egg yolk

Preheat the oven to 200°C fan.

Peel, halve and finely slice the onion. Sauté in a small pan with hot oil until softened. Roughly chop the tomatoes.

Knead the flour with baking powder, half of the cheese, salt, poppy seeds, soft butter and enough yogurt to make a smooth dough that is easy to knead. Fold in the onions and tomatoes at the end.

Roll out the dough on a floured surface to about 1.5 cm thickness and cut out 10-12 circles (≈6 cm diameter). Place on a baking tray lined with parchment paper.

Whisk the egg yolk with 2 tbsp water and brush over the scone rounds. Sprinkle with the remaining cheese and bake in the hot oven for about 15 minutes until golden brown.

Remove from the tray and cool on a wire rack. Serve with Brie if desired.
