Ingredients

  • 250 g puff pastry
  • 2 tbsp olive oil
  • 200 g pureed tomatoes
  • 1 tbsp fresh chopped thyme
  • 1 tbsp fresh chopped basil
  • Salt
  • black pepper (freshly ground)
  • 400 g cherry plum tomatoes
  • 250 g mozzarella
  • 100 g grated Parmesan
  • basil for garnish

Instructions

    Roll the puff pastry to a rectangle about 4 mm thick if necessary. Trim the edges to be about 1.5 cm wide. Brush the new edges with water, lay the strips over them and trim any excess. Press lightly and place on a baking sheet lined with parchment paper. Brush the base and edge with oil.

    Preheat the oven to 220°C fan.

    Mix the pureed tomatoes with thyme and basil, season with salt and pepper, taste, and spread onto the pastry base. Wash, clean, and halve the cherry plum tomatoes. Drain the mozzarella well and cube it. Distribute the tomatoes over the tart. Sprinkle with parmesan and bake in the oven for about 20 minutes until golden brown. Serve sliced with basil garnish.
