  • 0.25 l milk
  • 60 g Butter
  • 1 pinch salt
  • 180 g flour
  • 4 eggs
  • 100 g Gorgonzola
  • 100 g cream cheese
  • Pepper

Instructions

    Preheat the oven to 200 °C (top and bottom heat). For the puffs, bring the milk, butter, and a pinch of salt to a boil in a saucepan. Sift the flour into the boiling liquid and stir. Keep stirring over low heat until a dough ball forms and a white film appears on the pan’s bottom. Remove from heat and whisk in the eggs one at a time. Fill a pastry bag fitted with a medium star tip with the puff dough and spray 2–3 cm dots spaced generously onto a baking sheet lined with parchment paper. Place a small oven‑proof bowl of water on the oven floor. Slide the puffs onto the middle rack and bake for 25–30 minutes until golden brown.

    Take the puffs out of the oven, let them cool slightly, then cut horizontally with scissors. Let them cool completely on a cooling rack.

    For the blue cheese cream, blend both Gorgonzola and cream cheese with an immersion blender, adding 2–3 Tbsp water as needed to reach desired consistency. Season the cheese cream with pepper and fill a pastry bag fitted with a star or round tip. Spread the cheese cream onto the lower halves of the puffs and top with the upper halves.
