Savory Carrot Tart

Ingredients
- 200 g Flour
- 100 g butter
- 1 egg
- 8 carrots
- 200 ml whipping cream
- 3 tbsp crème fraîche
- 1 tsp freshly grated ginger
- 3 eggs
- 3 tbsp freshly grated Parmesan
- Salt
- pepper (ground)
- 2 tbsp coarsely chopped walnuts
Instructions

Knead a shortcrust pastry from flour, cold butter cubes, egg and optionally 2 tbsp water. Wrap in cling film and chill for 30 minutes.

Preheat the oven to 180°C fan.

Peel and slice the carrots. Blanch in boiling salted water for 4-5 minutes until firm. Shock in ice water and drain. Whisk cream with crème fraîche, ginger, eggs and parmesan. Season with salt and pepper. Roll out the pastry to fit a tart tin and line the rim. Arrange carrot slices on the base and pour over the custard mixture. Bake in the preheated oven for about 40 minutes until golden brown. Let cool in the tin and sprinkle walnuts before serving.
