Savory Cabbage Pudding

Ingredients
- 1 kg white cabbage
- Salt
- 1 EL Butter
- 200 g lamb steak
- 100 g ham bacon
- 1 old-fashioned roll
- 0.125 l milk
- 2 cm ginger
- 2 Eggs
- 1 TL mustard (medium hot)
- Pepper
- ground cumin
- butter (for the pan)
- 1 pudding mold (with lid)
Instructions

Wash the cabbage on the outside and remove the stem with a sharp knife. Boil plenty of salted water and cook the cabbage for about 5-8 minutes so that the outer leaves become tender and can be easily removed. Remove the middle rib.

Grease the pudding mold well and line it with cabbage leaves.

Remove the hard middle parts from the remaining cabbage, finely chop with a carving knife.

Coarsely chop lamb meat and ham bacon, put them in a food processor with a chopping blade and process finely.

Peel the ginger, finely chop and add to the meat mixture; add eggs, spices and mustard, then mix in the finely chopped cabbage.

Fill the pudding mold lined with cabbage leaves with the mixture. Press down slightly, cover with the remaining cabbage leaves and seal the mold with its lid.

Place the pudding mold on an inverted saucer inside a pot, pour boiling water up to halfway, close the pot and cook over medium heat for about 1 hour, covering the pot with a damp cloth.

Remove the pudding from the pot, let it rest for 10 minutes, then transfer to a plate and serve.
