Sauerkraut Potato Patties with Lentil Vinaigrette

Ingredients
- 2 tbsp red lentils
- 2 tbsp Red wine vinegar
- juice of 1 orange
- Salt
- Pepper
- a pinch of sugar
- 4 tbsp oil
- 100 g lamb's lettuce
- 750 g potatoes
- 1 bunch chives
- 250 g sauerkraut
- 2 tbsp starch
- 2 Eggs (size M)
- Salt
- freshly ground pepper
- butterclarified

First, cook the lentils in water for 3-4 minutes. Drain. Whisk vinegar with orange juice, sugar or maple syrup and oil. Clean and rinse lamb's lettuce, then drain. For the potato patties, peel, wash and grate the potatoes coarsely. Rinse chives, dry and cut into rings.

Spoon sauerkraut onto a plate, sift starch over it and mix. Combine with grated potatoes, eggs and chives; season with salt and pepper. Heat 2 tsp clarified butter in a non-stick pan. For each patty, pour about 2 tbsp potato mixture and press slightly flat. Cook both sides on medium heat until golden brown. Repeat until the mixture is used up. Warm the vinegar-oil dressing with lentils gently. Toss lamb's lettuce in it and serve alongside the patties.
