Saté-Spieße mit Erdnussdip

Ingredients
- 750 g beef fillet
- 40 wooden skewers (about 20 cm long)
- 3 tbsp Soy sauce
- 3 tbsp sweet soy sauce
- 1 tsp Sambal oelek
- 2 shallots
- 3 Garlic cloves
- 200 g roasted peanuts
- 4 tbsp sweet soy sauce
- 1 tsp Sambal oelek
- 0.5 lemon (juice)
- 3 tsp palm sugar
- 3 tbsp peanut oil
- 3 tbsp cooking oil
- 200 ml unsweetened coconut milk

Briefly rinse the beef fillet, pat dry and cut into about 1 cm cubes. Thread four pieces onto each skewer with enough space between them. Arrange the skewers in a circle on a plate. Mix all marinating ingredients together and spread over the meat. Marinate the skewers for about 1 hour, turning occasionally.

Peel and finely chop shallots and garlic. Pulse peanuts in a blender to make a paste. Combine prepared ingredients with sweet soy sauce, sambal oelek, lemon juice and palm sugar into a smooth paste. Heat oil in a small pan. Sauté the peanut paste over medium heat for 2–3 minutes. Deglaze with coconut milk. Reduce heat and simmer while stirring constantly for another 2–3 minutes; add water if the sauce thickens too much.

Grill the skewers over a wood charcoal flame on one side for 2–3 minutes, brushing with remaining marinade in between. Alternatively, you can pan‑fry them in 3 tbsp oil over medium heat for about 5 minutes per side. Serve the skewers drizzled with peanut sauce.
