Ingredients
- 500 g rabbit fillet (alternatively chicken meat)
- 12 wooden skewers
- 1 onion
- 2 cm ginger
- 0.5 tsp sambal oelek
- 0.5 lemon (juiced)
- Salt
- Pepper
- 1 tsp ground coriander
- 1 tbsp light soy sauce
- 2 tsp brown sugar
- 180 g finely ground peanut butter
- 125 ml Coconut milk
- 125 ml Vegetable broth
- 2 tbsp Light soy sauce
- 1 tbsp oyster sauce
- Salt
- chili powder (spicy)

Peel and roughly chop the ginger and onion, combine with the remaining ingredients for the marinade, blend until smooth, and place in a freezer bag. Cut the meat into cubes, add to the marinade, seal the bag well, knead slightly, refrigerate and marinate for at least 2 hours, occasionally kneading lightly during this time.

Combine all sauce ingredients in a pot, mix together and heat slowly, simmer gently for 5 minutes, taste and blend until smooth.

Drain the meat and thread onto skewers. Grill the skewers over high heat for about 8 minutes, turning frequently. Serve hot with sauce.
