Salmon with Vegetables en papillote

- 1 Zucchini
- 1 Carrot
- 2 Spring Onions
- 2 shallots
- 1 untreated lemon
- 3 tbsp olive oil
- Salt
- Pepper (freshly ground)
- 4 salmon fillets (about 220 g each)

Peel or wash and clean the zucchini, carrot, spring onions, and shallots. Slice the shallots into rings and cut the rest into thin strips about 8 cm long. Place everything in a bowl. Halve the lemon and cut four thin slices. Squeeze the juice of the remaining half and mix with 2 tbsp oil, then combine with the vegetables. Season with salt and pepper.

Preheat the oven to 200°C (fan).

Lay out four sufficiently large sheets of parchment paper and brush the center with oil.

Rinse the salmon, pat dry, and season both sides with salt and pepper. Place on the parchment and distribute the vegetables over it. Top with lemon slices. Fold and seal the parchment tightly around the fish. Bake on a rack in the oven for 20-25 minutes.
