Salmon with Vegetable Sauce

Ingredients
- 2 pieces salmon fillet (with skin, about 180 g each)
- 1 small yellow bell pepper
- 1 small red bell pepper
- 1 Zucchini
- 1 Shallot
- 3 tbsp olive oil
- 1 tsp tomato purée
- 2 tbsp crème fraîche
- Salt
- ground black pepper

Wash and peel the peppers and zucchini, then dice them into small cubes. Peel the shallot, finely dice it, and sauté in 2 tbsp olive oil until translucent; add the vegetable cubes, cook briefly, then pour in 1/2 cup water, season with salt and pepper, cover, and simmer for 5 minutes. Blend 2–3 tbsp of the cooked vegetables with a bit of the cooking liquid, tomato purée, and crème fraîche, then return to the pot; adjust seasoning with salt and pepper.

Sear only the skin side of each salmon fillet in a pan with remaining oil for 3–4 minutes; season with salt and pepper.
