Salmon Tartare with Cucumber

Ingredients

  • 300 g salmon fillet (skinless)
  • 2 tbsp chives rolls
  • 1 spring onion (white part only)
  • 100 g cream cheese
  • 2 tbsp milk
  • 3 tbsp grape seed oil
  • 3 tbsp Lemon juice
  • 1 cucumber
  • Salt
  • white pepper
  • 5 dried pickled tomatoes

Instructions

    Pat salmon dry and cut into 1 cm cubes. Marinate with lemon juice, salt, pepper, and grape seed oil; season to taste and cover in the refrigerator.

    Wash spring onion, pat dry, and finely chop. Whisk cream cheese with chives rolls and milk, seasoning with salt and pepper.

    Drain pickled tomatoes and slice into thin strips. Wash cucumber, pat dry, and cut into very thin slices or julienne. Lightly salt.

    To serve, arrange tomato strips on a plate, top with salmon tartare, cover with cream cheese spread, and garnish with cucumber slices. Optionally add more tomato strips and chives rolls. Serve immediately.
