Salmon Rolls with Beans

Ingredients
- 300 g green beans
- Salt
- 1 handful sprouts (e.g.)
- 4 sheets rice paper (Ø 22 cm)
- 200 g smoked salmon (sliced)
- Wasabi paste (to taste)
- light soy sauce
Instructions

Wash, trim and blanch the beans in salted water for about 8 minutes. Rinse with cold water and drain. Rinse the sprouts and let them drain well.

Fill a shallow bowl slightly larger than the rice paper sheets with water. Place a kitchen towel beside it and set another towel ready. Dip each sheet individually into the water and soak for about 1 minute. Then carefully lay it on the towel and pat dry with the second towel.

Lay salmon slices on each sheet, spread a little wasabi, top with beans and sprinkle sprouts. Drizzle a bit of soy sauce. Fold the sides over the filling and roll tightly. Cut each roll in half and arrange on plates as desired.
