Ingredients

  • 1 onion
  • 2 Zucchini
  • 100 g light cream
  • 100 ml Vegetable broth
  • 1 egg yolk
  • 4 tbsp freshly grated Parmesan
  • 2 tbsp coarse mustard
  • Salt
  • Pepper
  • 4 flat salmon fillets (about 140 g each)
  • 1 tbsp flour
  • vegetable oil (for frying)

Instructions

    Preheat the oven to 220°C (428°F) with upper and lower heat.

    Peel the onion and cut into thin rings. Wash, trim, and slice the zucchini into sticks. Distribute the onion rings and zucchini sticks evenly among four portion-sized baking dishes. Whisk together the light cream, vegetable broth, egg yolk, parmesan, and mustard; season with salt and pepper. Spread over the vegetables and bake in the oven for about 15 minutes.

    Rinse the fish, pat dry, season with salt and pepper, then coat in flour. Fry in hot oil in a pan, browning each side for 2-3 minutes until golden brown.
