Salmon Fillet on Spinach

Ingredients
- 300 g fresh spinach
- 600 g salmon fillet (4 fillets)
- Sea salt
- black pepper
- 10 g butter (2 tsp)
- 2 sprigs dill
- 2 sprigs thyme
- 2 sprigs parsley
- 150 ml Vegetable broth
- 1 Organic lemon
Instructions

Wash and spin dry the spinach. Rinse the salmon under cold water, pat dry, and season with salt and pepper.

Heat 1 tsp of butter in a pan. Sear the salmon on each side for 2 minutes over medium heat. Wrap in foil and bake in a preheated oven at 100 °C (fan 80 °C; gas: level 1) for 10 minutes.

Meanwhile, wash, dry, shake off excess water, and chop dill, thyme, and parsley.

Heat the herbs with broth and remaining butter in a small pot. Add the spinach and stir for 1 minute over medium heat.

Wash the lemon, pat dry, and slice into thin rounds.

Arrange the spinach and salmon on four plates and garnish with lemon slices.
