Ingredients

  • 400 g Potatoes
  • 1 tbsp butter (for greasing the dish)
  • Salt
  • Pepper (freshly ground)
  • 250 g smoked salmon (thin slices)
  • 4 eggs
  • 200 g heavy cream
  • 75 g mixed chopped herbs
  • 50 g grated Parmesan (or aged Gouda)
  • nutmeg

Instructions

    Preheat the oven to 200 °C (400 °F) with top and bottom heating. Grease a baking dish with butter. Wash, peel, and slice the potatoes into 1–2 mm thick rounds. Spread one-third of the potato slices in the dish, seasoning with salt and pepper.

    Layer half of the salmon over the potatoes, cover with another third of the potato slices, then add the remaining salmon. Season each layer with salt and pepper.

    Whisk the eggs with the cream, fold in the herbs and cheese, and season the mixture with salt, pepper, and nutmeg. Pour this custard over the layered potatoes and salmon. Distribute the remaining potato slices on top of the gratin and bake in the preheated oven for 45 minutes.
