Ingredients

  • 250 g flour
  • 20 g yeast
  • 0.125 l lukewarm water
  • 4 tbsp olive oil
  • Salt
  • 400 g Tomatoes
  • 2 tbsp olive oil
  • 1 tsp dried thyme
  • 1 small red chili pepper
  • 200 g mozzarella
  • 100 g salami (sliced)
  • 2 medium mushrooms

Instructions

  1. 1.

Sift flour into a bowl, make a well in the center. Crumble yeast into some water, pour into the well, dust with flour and cover for 15 minutes to rise. Add remaining water with salt and oil, knead into a smooth dough. Cover and let rise in a warm place for 1 hour.

  2. 2.

Wash chili pepper, cut lengthwise, deseed, remove white membrane, dice finely. Blanch tomatoes, cool, peel skin, cube, then simmer with 1 tbsp oil and chili in a pot. Season with thyme, salt, and pepper.

  3. 3.

Slice mozzarella, clean mushrooms and slice them.

  4. 4.

Oil pizza pan lightly. Knead dough again, roll out, place in pan, form slightly thicker edges. Preheat oven to 250°C. Spread tomato sauce over dough. Top with mozzarella, mushroom, and salami slices, drizzle with olive oil. Bake in hot oven for about 12–15 minutes until cheese melts.
