Ingredients

  • 400 g Prinzessbohne
  • 1 Knolle Fenchel
  • 200 g gelbe Cocktailtomaten
  • 200 g rote Cocktailtomaten
  • 400 g gekochte junge Kartoffeln
  • 200 g Thunfisch Dose (im eigenen Saft)
  • 1 rote Zwiebel
  • 0.5 Bund Petersilie
  • 50 g schwarze entsteinte Oliven
  • 4 EL Olivenöl
  • 1 TL scharfer Senf
  • 3 EL Weißweinessig
  • Meersalz
  • Pfeffer (aus der Mühle)

    Wash, trim and blanch the beans in salted water for 2-3 minutes until al dente. Rinse and drain. Wash, trim, remove the core of the fennel and slice into thin strips or shave. Blanch for about 1 minute. Wash and halve the tomatoes. Peel the potatoes and cut into bite-sized pieces.

    Drain the tuna and flake it. Peel and slice the onion. Wash the parsley, shake dry, pick off leaves and roughly chop. Combine all in a large bowl, mix with olive oil, mustard and white wine vinegar, season with salt and pepper. Serve with white bread if desired.
