Salad with Smoked Salmon Bags

Ingredients
- 12 large slices smoked salmon
- 800 g green asparagus
- 6 tbsp Olive oil
- juice of one lemon
- 12 stalks chives
- 2 tbsp chive ribbons
- 400 g cream cheese
- 100 g whipping cream
- Salt
- Pepper (freshly ground)
- Salad leaves (for garnish)
Instructions

Wash the asparagus, peel the lower third, trim the ends and cut diagonally into pieces about 4 cm long. Boil in salted water for about 10 minutes, then remove, shock in ice water and drain.

Whisk together 2 tbsp lemon juice with olive oil, salt and pepper; add 1 tbsp chive ribbons and let the asparagus soak for about 20 minutes.

Mix cream cheese and whipping cream, season with a bit of lemon juice, salt and pepper, then fold in 1 tbsp chive ribbons.

Spread the cheese mixture over the salmon slices and bind into bags using individual chive stalks.

Arrange the asparagus on salad leaves with the salmon bags.
