Ingredients

  • 200 g mixed leaf lettuce (mixed salad greens)
  • 150 g fresh cranberries
  • 2 oranges
  • 3 tbsp Lemon juice
  • 1 tsp liquid honey
  • 4 tbsp grape seed oil
  • Salt
  • 200 g smoked duck breast fillet (sliced)
  • 4 slices toast bread

Instructions

    Rinse the salad, wash it and shake dry. Thoroughly peel the oranges with a sharp knife, cut the fillets from the separating walls and catch the juice while doing so. Press the juice from the leftovers. Wash the cranberries and, still dripping wet, combine them with the orange juice in a small pot and bring to a boil; cook until the fruits begin to burst, then set aside immediately and let cool.

    For the dressing whisk together lemon juice, honey and oil and season with salt. Arrange the orange fillets with the salad on plates, drizzle the dressing over it, and top with cranberries and duck meat slices.

    Toast the bread slices until golden yellow, cut star shapes out of them, and serve the salad garnished with the toast.
