Salad with Ground Beef

Ingredients

  • 1 large carrot
  • 3 celery sticks
  • 1 iceberg lettuce
  • 2 Garlic cloves
  • 1.5 cm fresh ginger
  • 1 red chili pepper
  • 500 g ground beef
  • 2 tbsp plant oil
  • Salt
  • ground pepper (from grinder)
  • 3 spring onions
  • 2 tbsp mixed chopped herbs (parsley, coriander, basil, mint)
  • 4 tbsp soy sauce
  • 2 untreated limes (juice)

Instructions

    Peel the carrot and slice it lengthwise into very thin rounds or shave it. Wash, trim, and cut the celery into 6 cm long sticks. Separate the iceberg lettuce leaves, wash them, and place them in ice water. Set aside. Peel the garlic and ginger; finely chop the garlic and cut the ginger into fine strips.

    Wash the chili and slice it into rings. Heat oil in a pan and briefly sauté the garlic with the ginger and chili. Add the ground beef and cook until crumbly. Season with salt and pepper. Wash, trim, and finely chop the spring onions. Add them along with the herbs to the beef and mix well.

    Add soy sauce and lime juice, taste, and simmer over medium heat for about 15 minutes. Remove the lettuce leaves from the ice water, pat dry, and arrange on a plate. Place a portion of the beef mixture in the center and serve with carrot slices and celery sticks arranged around it.
