Ingredients
- 4 small chicken breast fillets
- Salt
- pepper (ground)
- 2 tbsp oil
- 250 g pineapple flesh
- 1 apple
- 2 tbsp lemon juice
- 1 red bell pepper
- 200 g green snap beans
- 200 g mixed salad greens (lettuce, frisee...)
- 2 tbsp white wine vinegar
- 3 tbsp sunflower oil
- 1 pinch sugar
- 0.5 tsp mustard

Whisk vinegar, mustard, sugar, a pinch of salt and pepper; whisk in the oil, taste and adjust seasoning. Toss salad greens with dressing, plate on a dish and spoon chicken mixture over top.
