Ingredients
- 350 g feta cheese
- 1 untreated lemon
- 4 tbsp olive oil
- 250 g mixed leafy salad (e.g., Lollo Rosso and Lollo Bianco, dandelion)
- 8 figs
- 4 tbsp balsamic vinegar
- 1 tsp Honey
- Salt
- Pepper

Cube the feta and place in a bowl. Wash the lemon hot and pat dry. Zest the peel and squeeze out the juice. Mix both with 2 tbsp oil and add to the feta, cover and refrigerate for about 1 hour.

Rinse the leafy salad, clean, spin dry, and tear into small pieces. Wash and halve the figs. Combine figs with the salad in a bowl and distribute the feta over them. Whisk the remaining oil with balsamic vinegar, honey, salt, and pepper; taste and adjust. Drizzle over the salad, gently toss, and serve.
