Sage Finger Noodles

Ingredients

  • 1 kg waxy potatoes
  • 6 tbsp flour
  • 4 tbsp starch
  • salt (pepper)
  • 1 sprig sage
  • 100 g butter

    Wash potatoes, cover in a pot with salted water and cook for 20 minutes. Drain, let cool, peel, and press through a potato masher twice. Knead flour with starch, salt, and pepper. Dust the work surface with flour. Form the potato dough into thumb-thick rolls and cut them into pieces about 1 cm wide.

    Cook the potato noodles in plenty of salted water over medium heat until they rise to the surface. Remove, shock in cold water, and drain. Pick sage leaves, wash, and slice into narrow strips. Heat butter in a pan, add sage, and sauté. Add the noodles and brown them on all sides.
