Sage Chicken

Ingredients

  • 500 g small young potatoes
  • Salt
  • Pepper (freshly ground)
  • 2 Garlic cloves
  • 4 tbsp olive oil
  • 2 tsp Honey
  • 2 sprigs sage
  • 2 chicken thighs
  • 4 tbsp freshly grated Parmesan

Instructions

    Wash the potatoes thoroughly and cook them with skins in salted water for 15 minutes until just tender; drain and set aside.

    Peel the garlic and press it into a small bowl, then mix with 2 tbsp oil, honey, salt, and pepper. Remove leaves from the sage sprigs.

    Separate the skin from the chicken thighs by sliding your finger between skin and meat. Brush the mixture onto the meat and skin with a brush, inserting half of the sage leaves between them. Season the thighs with salt and pepper.

    Heat remaining oil in an ovenproof pan and sear the thighs on both sides; then bake in a preheated oven at 180°C (350°F) for about 30 minutes.

    Halve the potatoes and place them cut side up in a greased baking dish. Sprinkle cheese and remaining sage leaves over the potatoes, then season with pepper. Add the chicken thighs to the dish and bake for an additional 10 minutes until done.
