Ingredients
- 100 g long grain parboiled rice
- 1 tsp saffron
- 200 g broccoli
- 2 tsp oil
- 1 untreated lemon
- 1 tsp horseradish
- Salt
- Pepper

Cook the rice with saffron in about twice its volume of salted water until tender.

Clean the broccoli, cut into florets and boil in salted water for about 15 minutes.

Squeeze the lemon, whisk 2 tbsp oil and horseradish together, add grated lemon zest, salt and pepper. Pour the dressing over the broccoli.
