Ingredients

  • 8 ripe peaches
  • 1 untreated lime
  • 1 vanilla pod
  • 60 g white demerara sugar
  • 800 ml white rum

Instructions

    Peel, blanch, cool, peel, quarter, pit the peaches and cut into thick slices. Rinse the lime hot, pat dry and slice thinly. Split the vanilla pod lengthwise and cut into pieces.

    Fill hot glasses with peach slices, demerara sugar and lime slices, pour rum over until covered, seal tightly and let steep in a cool dark place for about 6 weeks.
