Ingredients

  • 8 cornichons
  • 2 large onions
  • 600 g beef roulade (4 beef roulades)
  • black pepper (freshly ground)
  • 4 tsp medium-hot mustard
  • 8 slices breakfast bacon
  • Salt
  • 1 Carrot
  • 1 stalk Celery
  • 4 tbsp olive oil
  • 150 ml dry red wine
  • 250 g passata
  • 200 ml beef stock

Instructions

    Dice the cornichons. Peel and dice the onions. Lay the roulades on a work surface and season both sides generously with pepper. Spread 1 tsp mustard on each slice, sprinkle with half of the onion cubes and all cornichon cubes, then lay two bacon slices on top.

    Roll up the roulades and secure with meat twine. Peel and finely dice the carrot and celery. In hot oil, sear the roulades on all sides, salt only after searing, then remove. Add the vegetables and sauté over medium heat while stirring frequently. Deglaze with red wine and reduce to half.

    Return the roulades with passata and stock to the liquid and simmer gently for about 1½ hours. Wash, drain, and finely chop parsley. Remove the roulades and keep warm.

    Reduce the sauce further if needed and season with pepper and salt. Serve the roulades with the red wine sauce.
