Ingredients

  • 800 g turkey breast fillet (ready to cook)
  • 1 onion
  • 1 tsp butter
  • 400 g dried plums
  • 50 g plum jam
  • Salt
  • Pepper (freshly ground)
  • 2 tbsp Vegetable oil
  • 2 tbsp coarse mustard
  • 400 ml poultry stock
  • 2 sprigs Rosemary
  • 1 tsp lemon zest
  • 1 tsp orange zest

Instructions

    Preheat the oven to 180°C with top and bottom heat. Wash and pat dry the turkey breast. Slice lengthwise, open like a book and lightly pound flat. Dice the onion and sauté in hot butter until translucent, set aside. Finely chop the plums, then blend them with plum jam and onions in a blender.

    Season the opened fillet with salt and pepper, spoon the plum mixture into the center and fold the fillet back together. Tie tightly with kitchen twine. Heat oil in a roasting pan and brown the roast all around. Brush with mustard, pour in stock, and add rosemary sprigs.

    Roast in the preheated oven for about 1 hour, basting with cooking juices every few minutes. Remove the finished roast, sprinkle with lemon and orange zest, and garnish with rosemary. Slice and serve on a plate.
