Ingredients
- 1.2 kg pork belly (ready-to-cook, with rind)
- Salt
- 1 tsp peppercorns
- 1 tbsp cumin seeds
- 0.5 tsp allspice berries
- 1 whole mace
- 1 tsp dried marjoram
- 1 tbsp freshly chopped parsley

Preheat the oven to 180°C fan-forced.

Crush 1 tsp salt with pepper, cumin, allspice, mace, and marjoram in a mortar. Mix in the parsley.

Wash the pork belly, pat dry, rub generously with the spice mixture, and place on a baking rack (with a fat pan underneath). Roast in the oven for 60-70 minutes until crisp.

Remove from the oven and serve immediately.
