- 2 pre-cooked perlhühners (about 800 g)
- Sea salt
- black pepper
- 2 onions
- 1 Garlic clove
- 4 small white beets
- 0.5 bunch thyme
- 4 tbsp olive oil
- 150 ml dry white wine
- 2 zucchinis
- 4 tomatoes
- 4 Garlic cloves
- 50 g black olives
- 0.5 bunch Basil

Preheat the oven to 180°C. Wash and pat the perlhühners dry. Season inside and out with sea salt and black pepper. Peel the onions and garlic. Quarter the onions. Mince the garlic. Peel the beets and cut into strips. Rinse the thyme, shake off excess moisture, and strip leaves from 2-3 stems. Heat the olive oil in an oven-safe pan and sauté the vegetables. Add the thyme and deglaze with white wine. Place the perlhühners breast-side down in the pan and transfer to the oven. Bake for about 20 minutes.

Meanwhile wash, trim, and halve or quarter the zucchinis lengthwise, then slice them. Boil the tomatoes briefly, peel, halve, core, and dice them. Peel the remaining garlic cloves and thinly slice them.

Flip the perlhühners and add the remaining vegetables. Season lightly with salt and pepper and bake for an additional 30 minutes in the oven. Finish with chopped basil and serve.
