Ingredients

  • 1.5 kg spotted pig ham (with rind)
  • 50 g spice cloves
  • Salt
  • Pepper (freshly ground)
  • 500 ml dark beer
  • 2 tbsp clarified butter
  • 4 sprigs Rosemary
  • fresh rosemary sprig (for garnish)

Instructions

    Preheat the oven to 180°C fan-forced. Briefly rinse the meat, pat dry and score the rind in a diamond pattern with a sharp knife. Insert spice cloves into the intersections of the cuts and season all sides with salt and pepper. Mix the beer with 750 ml water.

    Melt the clarified butter in a roasting pan and brown the ham all over. Pour in 250 ml of the beer mixture, place the washed rosemary on top of the meat, and bake in the oven for 1 hour, basting occasionally with the beer mixture.

    Turn the meat over and continue cooking at 160°C fan-forced for about 40 minutes, again basting periodically with the remaining beer mixture.

    Whisk 1 tbsp salt with 150 ml water, brush the roast with this brine, and cook for another 20 minutes. After half of that time, apply another coat of brine.

    Remove the roast from the oven and garnish with fresh rosemary. Serve with sweet potato fries.
