Ingredients

  • 1 duck (about 2 kg)
  • 3 oranges
  • 1 sprig of savory
  • 40 ml orange liqueur
  • Salt
  • ground pepper

Instructions

    Wash the duck and pat it dry.

    Remove a sprig of savory, mix with salt and pepper, and season the duck inside and out. Sew the cavity shut with kitchen twine. Place the duck breast side down in a roasting pan. Add a little water and roast at 200°C for about 45 minutes. Turn the duck over and roast another 45 minutes, basting frequently with the pan juices. Remove the duck from the pan and finish under a preheated grill for about 10 minutes until golden brown.

    Halve the oranges. Slice one half into thin rounds and place them on top of the duck. Squeeze juice from the other half. Skim fat from the drippings. Add orange juice, bring to a boil, and season with salt, orange liqueur, and pepper. Return the duck to the pan and serve.
