Ingredients

  • 2 untreated lemons
  • 4 pieces roach fillet (≈160 g each)
  • Sea salt
  • Pepper (freshly ground)
  • 1 tbsp Olive Oil
  • 60 g Butter
  • 1 tbsp capers
  • 1 tbsp freshly chopped parsley
  • parsley for garnish

Instructions

    File a lemon and wash another lemon hot, then grate its zest. Squeeze the juice. Wash the roach, pat dry, season with salt and pepper, and sear in hot oil in a non-stick pan for about 2 minutes per side until golden brown. Plate on warmed dishes and melt butter in the pan. Add lemon slices, zest, juice, capers, and parsley; let heat through. Season with salt and pepper and drizzle over the fish.
