Rice with Green Asparagus, Carrots, Pine Nuts and Peanuts

Ingredients
- 350 g basmati natural rice
- Salt
- 2 carrots
- 200 g mushrooms
- 400 g green asparagus
- 4 tbsp olive oil
- 2 tbsp butter
- ground pepper
- 30 g peanuts
- 25 g pine nuts
Instructions

Cook the rice in 2.5 times its volume of salted water according to package instructions.

While the rice cooks, peel and slice the carrots lengthwise into thin strips; clean and slice the mushrooms; wash the asparagus, trim the woody ends, peel the lower third of each stalk, then cut into slices.

Heat olive oil and butter in a large pan and sauté the asparagus over medium heat for about 5 minutes. Season with salt and pepper. Add the carrots and mushrooms, turning occasionally, and cook for another 3–4 minutes.

Add the cooked rice, peanuts and pine nuts to the pan, warm briefly, and season with salt and pepper to taste.
