Rice Vegetable Soup with Tofu

Ingredients

  • 50 g carrots
  • 50 g red bell pepper
  • 1 tsp butter
  • 150 g tofu
  • 50 g cooked rice
  • 800 ml vegetable stock (glass)
  • 1 tbsp light soy sauce
  • Salt
  • white pepper
  • 1 tbsp finely chopped parsley

Instructions

    Peel the carrot and dice it finely. Wash the bell pepper, remove seeds, and dice it finely as well.

    Sauté the vegetables in hot butter in a pot, pour in the broth, add soy sauce and a pinch of salt, bring to a boil, then simmer gently for 5 minutes. Cut the tofu into small pieces, add to the soup, let it cook for 3 minutes, season with salt and pepper, and stir in parsley.

    For serving, place some rice in pre-warmed bowls and ladle the broth over it.
