Rice Skillet with Sausages

Ingredients

  • 1 onion
  • 4 tomatoes
  • 1 tbsp plant oil
  • 10 Nürnberger Rostbratwürste (or other small light sausages)
  • 300 g long grain rice
  • 1 tsp tomato paste
  • 450 ml vegetable broth
  • Salt
  • Pepper
  • 75 g Parmesan
  • a handful fresh basil

Instructions

    Peel and chop the onion. Wash and halve the tomatoes. Remove seeds with a spoon and puree with an immersion blender. Dice the tomato flesh halves. Heat oil in a pot. Fry the sausages for 3 minutes, then remove. Sauté the chopped onion in the remaining fat over low to medium heat until translucent, about 2 minutes. Add rice and tomato paste; stir and sauté for about 1 minute. Deglaze with the pureed tomatoes and vegetable broth. Stir in the diced tomatoes. Season with salt and pepper. Cover and cook for about 12 minutes, stirring occasionally, until all liquid is absorbed.

    Meanwhile grate Parmesan. Cut sausages into pieces. Mix sausages and half the basil leaves into the cooked rice and warm briefly. Adjust seasoning with salt and pepper. Serve sprinkled with grated Parmesan and remaining basil leaves.
