Rice Patties with Saffron

- 1 Lorbeerblatt
- 350 g Rundkornreis
- 1 Döschen Safran (0,1 g)
- 50 g geriebener Parmesan
- 2 EL Butter
- 1 TL frisch gehackte Petersilie
- 3 Eier
- Pfeffer (aus der Mühle)
- 3 EL Mehl
- 80 g Semmelbrösel
- 4 EL Pflanzenöl

In a pot bring about 600 ml of salted water and the bay leaf to a boil, add the rice and let it soak for about 20 minutes over low heat while stirring frequently. Dissolve the saffron in 2 tablespoons warm water and stir into the rice with the Parmesan, let cool slightly, then mix in the butter, parsley and one egg.

For breading, whisk the remaining eggs in a deep dish or similar container, lightly salt and pepper.

Take small portions of the cooled rice with damp hands and shape into patties. Coat each patty in flour, dip through the egg mixture, and finally coat with breadcrumbs.

Add some oil to a hot pan and fry the patties until golden brown on both sides. Drain on kitchen paper and serve.
